How To Prepare Coconut Rice: The Nigerian Family Delicacy

Coconut rice is a nutritious and tasty meal made from rice and coconut milk. It is the ideal meal when you want to give your family a nice treat.

If there is any food that comes in several varieties of preparation, it is rice. Rice is the most consumed of all staple food in the Nigerian society. All tribes in Nigerian consume rice several times a week; especially on Sundays by the Christian community. During celebrations and holidays like Christmas and Easter celebrations, rice is also the most consumed of all foods.

Rice as a food could be eaten as jollof rice, banga rice, stew rice, spiced rice, coco nut rice, etc. While the most common way of preparing rice is in the stew format, coconut rice is also a popular way of preparing rice. Coconut rice is not only nutritious but a tasty and easy meal to prepare for the family on special occasions.

Children love coconut rice not only for its aromatizing fragrance but for its pleasuring effects to the taste buds. If you really want to give your family a surprise treat, then consider preparing coconut rice for them.

Ingredients

  • 6 cups of rice
  • Pieces of beef (cooked)
  • Shrimps
  • 3 small sized fresh tomatoes
  • 6 small sized fresh pepper
  • 1 medium sized onions
  • 4 garnishing carrots
  • 4 garnishing green pepper or peas
  • 5 tea cups coconut milk
  • 2 cubes of Maggi
  • 1 liter of water
  • Salt (to taste)

Method

First step is to get the coconut milk. This can be gotten by blending coconuts and squeezing out the milk without including the fibers. A good sieve will eliminate the fiber content from the coconut.

Now boil the coconut milk for about 10 minutes, add the cooked beef, shrimps and Maggi cubes. Also add the chopped tomatoes, onions, pepper and salt.

Parboil the rice and then add it to the boiling coconut milk. Cook the rice until soft. Cooking for about 40 minutes should do the job. It is advisable to reduce the cooking pressure and simmer until the liquid is dried up.

Garnish the cooked rice with carrots, green pepper or peas and then serve while still hot.

In Conclusion

Coconut rice is the simplest meals to prepare anytime any day. Though it could be time consuming to prepare; especially the blending and sieving of the coconut to extract the milk; the nutritious and aromatizing value of the meal is well worth the effort. The smiles and joy you will get from the whole family is also another thing of joy.
